Ingredients

Scale

Main Ingredients

  • 12 oz fresh prawns (shrimp), peeled and deveined
  • 8 oz linguine pasta
  • 3 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1/2 tsp red chili flakes
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice
  • Salt & pepper, to taste

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the linguine according to package instructions until al dente. Drain, reserving a cup of pasta water to adjust the sauce later if needed.
  2. Sauté Garlic and Chili: In a large skillet, heat olive oil and butter over medium heat. Add minced garlic and red chili flakes, cooking just until fragrant—about 1-2 minutes. Be careful not to burn the garlic.
  3. Cook the Prawns: Add the prawns to the skillet and season with salt and pepper. Sauté for 2-3 minutes on each side until they turn pink and opaque but still tender.
  4. Combine and Toss: Reduce heat and add the cooked linguine to the skillet. Toss everything together, adding a splash of reserved pasta water if necessary to create a silky sauce that coats every strand beautifully.
  5. Finish with Lemon and Parsley: Remove from heat and squeeze fresh lemon juice over the pasta. Sprinkle chopped parsley, give a final toss, and serve immediately for the best flavor.

Notes

  • Don’t overcook prawns: They cook quickly; overcooking makes them rubbery.
  • Reserve pasta water: Its starch helps emulsify the sauce and improve texture.
  • Use fresh garlic: Fresh minced garlic is key for that signature bold flavor.
  • Butter and oil combo: Butter adds richness, and olive oil prevents burning—balance is perfect.
  • Fresh herbs last: Add parsley or other herbs at the end to keep their bright color and freshness.
