  • 2 tbsp olive oil

Instructions

  1. Prep Your Ingredients: Wash and halve the baby potatoes for even cooking. Mince garlic cloves finely. Pat dry the steak and season generously with salt and pepper on both sides.
  2. Cook the Potatoes: Heat olive oil in a large skillet over medium heat. Place potatoes cut-side down and cook undisturbed until golden and crispy, about 8-10 minutes. Toss occasionally to ensure even browning and prevent burning.
  3. Sear the Steak: Push potatoes to one side of the skillet. Increase heat to medium-high. Add the steak and sear each side for 3-4 minutes depending on thickness and desired doneness. Remove steak and rest on a plate.
  4. Make the Garlic Butter Sauce: Reduce heat to medium. Add butter and minced garlic to the skillet with potatoes, stirring constantly until fragrant and combined. Add fresh herbs and cook together for a couple of minutes to meld flavors.
  5. Combine and Finish: Return the steak to the skillet and spoon the garlic butter sauce over the steak and potatoes. Let everything warm together for about a minute, then remove from heat and serve immediately.
