Instructions

  1. Prepare the Ingredients: Mince garlic and ginger, slice green onions, and chop any vegetables you’d like to add. Pat chicken thighs dry and season lightly with salt and pepper.
  2. Cook the Chicken: Heat sesame oil in a large pot or deep skillet over medium heat. Add chicken thighs and sear until golden brown on both sides, about 4–5 minutes per side. Remove chicken and set aside.
  3. Make the Garlic Broth: In the same pot, sauté garlic and ginger until fragrant, about one minute. Pour in chicken broth and soy sauce, then bring to a gentle simmer. Return chicken thighs to the pot and simmer for 15–20 minutes to develop flavor.
  4. Cook the Noodles and Vegetables: While broth simmers, cook ramen noodles according to package directions (usually 3–4 minutes). Add quick-cooking vegetables like bok choy or mushrooms to the broth a few minutes before finishing simmering to keep them tender.
  5. Assemble the Ramen Bowl: Remove chicken and slice into bite-sized pieces. Divide noodles into bowls, ladle hot broth over noodles, then top with chicken slices, green onions, and additional garnishes as desired. Drizzle a little sesame oil on top for extra aroma.
