Garlic Mushroom Rice Pilaf

Garlic Mushroom Rice Pilaf is a quick, easy, and flavorful side dish that combines aromatic garlic, tender mushrooms, and fluffy long-grain rice cooked in savory broth. Perfect for busy weeknights or casual dinners, this pilaf pairs wonderfully with various proteins or can be enjoyed on its own as a light, nutritious meal.

Ingredients

Scale

Rice and Broth

  • 1 cup long-grain white rice
  • 2 cups vegetable or chicken broth

Vegetables and Aromatics

  • 8 oz fresh mushrooms (button or cremini), cleaned and sliced
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced

Fats and Seasonings

  • 2 tablespoons olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Finishing Touch

  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the ingredients: Clean and slice the mushrooms, finely chop the onion, and mince the garlic cloves to have everything ready for cooking.
  2. Sauté the aromatics: In a large skillet or saucepan, heat olive oil or butter over medium heat. Add the chopped onion and cook until translucent. Then add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Cook the mushrooms: Add the sliced mushrooms to the pan, season with a pinch of salt and pepper, and cook until they release their moisture and become golden and tender, about 5 to 7 minutes.
  4. Toast the rice: Stir in the rice and cook for 1-2 minutes, allowing the grains to absorb the buttery, garlicky flavors and develop a nuttier taste.
  5. Simmer in broth: Pour in the broth, bring to a boil, then reduce the heat to low. Cover and let it simmer gently for about 15 minutes or until the rice is tender and the liquid is fully absorbed.
  6. Fluff and finish: Once cooked, fluff the rice pilaf with a fork. Stir in freshly chopped parsley for a burst of fresh color and flavor before serving.

Notes

  • Use fresh garlic and mushrooms for the best flavor and texture.
  • Do not rinse the rice before cooking to retain starch and achieve a creamy pilaf texture.
  • Sauté onions and garlic on medium heat to avoid bitterness from burnt garlic.
  • Choose a quality broth to enhance the overall flavor of the pilaf.
  • Let the pilaf rest covered for a few minutes after cooking to lock in moisture and perfect texture.
