Ingredients

Scale

Dry Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1/4 cup molasses
  • 1 tsp vanilla extract

Cheesecake Filling

  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

  1. Prepare the cheesecake filling: In a bowl, mix the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy, creating the luscious filling that contrasts beautifully with the spiced cookie exterior.
  2. Make the gingerbread cookie dough: In a separate bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt. In another bowl, beat the softened butter and brown sugar until fluffy. Gradually add eggs and molasses to the butter mixture, blending well. Slowly combine the dry ingredients into the wet mixture to form a soft, spiced dough.
  3. Assemble the cookies: Scoop a portion of the cookie dough and flatten it slightly in your hand. Place a dollop of cheesecake filling in the center, then top with another scoop of dough. Gently but thoroughly seal the edges to encase the cheesecake filling.
  4. Bake to perfection: Arrange the assembled cookies on a parchment-lined baking sheet. Bake at 350°F (175°C) for 12 to 15 minutes, until the tops are set but still soft. Remove from oven and allow cookies to cool before serving to enjoy the delightful balance of soft, chewy cookie and creamy center.

Notes

  • Chill the assembled cookie dough balls for at least 30 minutes before baking to prevent spreading and leaking.
  • Use room temperature cream cheese for a smooth, lump-free filling.
  • Do not overmix the cookie dough; blend ingredients just until combined to keep cookies tender.
  • Watch the baking time carefully, as cookies continue to firm up while cooling — avoid overbaking to maintain creamy centers.
  • Use parchment paper on baking sheets to prevent sticking and ensure even baking.
