Ingredients

Scale

Dry Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a large bowl, whisk together the dry ingredients: all-purpose flour, ground ginger, cinnamon, cloves, baking soda, and salt. In a separate bowl, cream the softened butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla extract to the butter mixture and mix until combined. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Cover the dough and chill it in the refrigerator for at least one hour to make it easier to roll and cut.
  2. Roll and Cut: Lightly flour a clean surface and roll out the chilled dough to approximately 1/4-inch thickness. Use your preferred cookie cutters, such as stars, trees, or gingerbread men, to cut out shapes. Carefully transfer the cut shapes onto parchment-lined baking sheets, spacing them about two inches apart to allow for spreading.
  3. Bake to Perfection: Preheat your oven to 350°F (175°C). Bake the cookies for 8 to 10 minutes, or until the edges start to firm up while the centers remain soft. Be careful not to overbake, as this will harden the cookies. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  4. Decorate and Enjoy: Once completely cooled, decorate the cookies as desired using royal icing, sprinkles, or melted chocolate. These cookies can be enjoyed fresh or stored for later. Have fun making each one uniquely festive and delicious.

Notes

  • Chill the dough: Refrigerate the dough for at least one hour to prevent spreading and make rolling easier.
  • Don’t over-roll: Keep the dough thickness consistent around 1/4 inch to ensure even baking and soft centers.
  • Use parchment paper: Line baking sheets with parchment to avoid sticking and promote even baking.
  • Handle gently when cutting: Use a metal spatula to transfer cookie shapes to the baking sheet to preserve their form.
  • Cool fully before decorating: Ensure cookies are completely cool to prevent icing from sliding or melting.
