Ingredients

Scale

Dry Ingredients

  • 2 cups all-purpose flour (or gluten-free baking blend for gluten-free version)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Wet Ingredients

  • 2 large eggs (or 2 flax eggs for vegan substitution)
  • 1 3/4 cups milk or buttermilk (or plant-based milk for vegan version)
  • 1/4 cup melted butter or oil
  • 1/4 cup molasses
  • 1/3 cup brown sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, ground ginger, cinnamon, nutmeg, and salt until well combined to evenly distribute spices for consistent flavor.
  2. Combine Wet Ingredients: In a separate bowl, beat the eggs and add milk (or buttermilk), melted butter, molasses, brown sugar, and vanilla extract. Mix until smooth and fully incorporated to create a rich batter base.
  3. Assemble the Batter: Pour wet ingredients into dry ingredients bowl. Gently fold together until just combined, avoiding overmixing to keep the waffles light and fluffy.
  4. Preheat and Grease the Waffle Iron: Heat your waffle iron following manufacturer’s instructions and lightly grease it with melted butter or cooking spray to prevent sticking and ensure crisp crust.
  5. Cook the Waffles: Pour batter onto the preheated waffle iron, filling without overflowing. Close lid and cook about 4 to 6 minutes until golden brown and crisp. Remove carefully and keep warm while cooking the rest.

Notes

  • Don’t overmix: Overworking the batter can make waffles tough, mix until just combined.
  • Use fresh spices: Freshly ground spices enhance aroma and flavor.
  • Preheat thoroughly: A hot waffle iron ensures crispy edges and even cooking.
  • Keep waffles warm: Store finished waffles on a cooling rack in a warm oven to maintain texture.
  • Adjust molasses: Reduce molasses for milder flavor or swap part of it with maple syrup.
