Instructions

  1. Prep the Chicken and Marinade: In a large bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and pepper. Add the chicken thighs and toss to coat well. Let marinate for at least 20 minutes to infuse the flavors.
  2. Chop the Vegetables: While the chicken is marinating, slice the bell peppers and red onion into strips and halve the cherry tomatoes to prepare them for roasting.
  3. Assemble the Bake: Preheat your oven to 400°F (200°C). In a large baking dish, arrange the marinated chicken thighs and surround them evenly with the chopped vegetables. Drizzle a little more olive oil over everything to help with roasting.
  4. Roast to Perfection: Place the baking dish in the preheated oven and roast for 35 to 40 minutes, or until the chicken is fully cooked and the vegetables are tender and caramelized.
