Meatballs

  • 1 lb ground turkey

  • 2 tbsp extra virgin olive oil (for cooking)

Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1/2 cup cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh dill, chopped
  • 1 tsp extra virgin olive oil
  • Pinch of salt

To Assemble

  • 4 pita breads
  • Optional toppings: sliced tomatoes, red onion rings, fresh lettuce
  • Optional garnishes: chopped parsley, crumbled feta cheese, sumac or smoked paprika

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground turkey with finely minced garlic, diced onion, dried oregano, dried dill, salt, pepper, and fresh lemon juice. Mix gently but thoroughly to blend all flavors evenly.
  2. Form and Cook the Meatballs: Shape the mixture into small meatballs about one inch in diameter. Heat olive oil in a non-stick skillet over medium heat and cook the meatballs for 8 to 10 minutes, turning occasionally until golden brown and cooked through.
  3. Make the Tzatziki Sauce: While the meatballs cook, grate cucumber and squeeze out excess water. In a bowl, combine grated cucumber with Greek yogurt, minced garlic, lemon juice, olive oil, chopped fresh dill, and salt. Mix well and set aside to chill and develop flavor.
  4. Assemble the Gyros: Warm the pita bread in a dry pan or oven for 1-2 minutes. Place a few meatballs in the center, spoon over a generous amount of creamy tzatziki sauce, and add optional toppings like sliced tomatoes, red onion rings, and fresh lettuce. Wrap it up tightly and serve.
