Enhanced with a tangy balsamic glaze and olive oil, this quick and easy recipe delivers a healthy and flavorful meal perfect for weeknights or weekend dinners.

Ingredients

Scale

Chicken & Cheese

  • 4 boneless, skinless chicken breasts
  • 8 oz fresh mozzarella, sliced

Produce

  • 2 ripe red tomatoes, sliced
  • 1 cup fresh basil leaves, torn

Condiments & Oils

  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil (for brushing and grilling)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the Chicken: Trim and lightly pound the chicken breasts to an even thickness of about ¾ inch for uniform cooking. Brush both sides generously with olive oil, then season with salt and pepper. Allow the chicken to rest at room temperature for 10-15 minutes to promote even grilling.
  2. Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Place the chicken on the grill and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F. Avoid moving the chicken too much to get nice grill marks and juicy texture.
  3. Add Tomatoes and Mozzarella: When the chicken is nearly cooked through, top each breast with slices of fresh tomato and mozzarella. Close the grill lid or cover with a dome and cook for 1-2 minutes until the cheese softens and melts slightly.
  4. Garnish with Basil and Balsamic: Remove the chicken from the grill and immediately sprinkle with torn fresh basil leaves. Drizzle with balsamic glaze to add a glossy, tangy finish that enhances the grilled flavors.

Notes

  • Use room temperature ingredients for even cooking and better melting of cheese.
  • Do not overcrowd the grill; give each piece of chicken enough space for proper heat circulation.
  • Choose ripe tomatoes for optimal sweetness and juiciness to balance the savory chicken and cheese.
  • Allow the chicken to rest for 5 minutes after grilling to retain juices and ensure tenderness.
  • Brush with extra olive oil to prevent sticking and add flavor and color.
