Ingredients

Bread and Cheese

  • Thick slices of sturdy white or sourdough bread (enough for desired casserole size, typically 8 slices)
  • Sharp cheddar cheese, shredded or sliced (about 2 cups)
  • Optional cheeses: mozzarella, pepper jack, gouda, fontina, gruyere (about 1 cup, optional mix)
  • Butter, softened, for spreading (about 4 tablespoons)

Tomato Soup Base

  • Good-quality canned or homemade tomato soup (4 cups)
  • Milk or cream (1 cup)
  • Salt, to taste (about 1 teaspoon)
  • Black pepper, to taste (about ½ teaspoon)
  • Optional herbs: fresh or dried basil, thyme, oregano (1-2 teaspoons)

Variations and Add-ons (Optional)

  • Cayenne pepper or chopped jalapeños for spice (¼ teaspoon or to taste)
  • Cooked bacon, ham, or shredded chicken for added protein (½ to 1 cup)
  • Dairy-free cheese and plant-based butter for vegan version (same quantities as dairy)

Instructions

  1. Prepare the Bread and Cheese: Butter one side of each slice of bread generously. Layer sharp cheddar or your choice of cheese between two slices of bread, ensuring the buttered sides face outward. Cut each sandwich into halves or quarters to facilitate layering in the casserole dish.
  2. Mix the Tomato Soup Base: In a medium bowl, combine the tomato soup with milk or cream. Season with salt, pepper, and any optional herbs. Stir well until smooth and creamy, creating a mixture that will soak into the bread during baking.
  3. Assemble the Casserole: Grease a casserole dish lightly. Layer the bottom with the sandwich pieces, then pour half of the soup mixture evenly over them. Repeat layering with the remaining sandwich pieces and the remaining soup mixture, ensuring sandwiches are coated but not submerged.
  4. Bake Until Golden: Preheat the oven to 350°F (175°C). Place the casserole in the oven and bake for 30-35 minutes or until the top is bubbly, golden brown, and crispy.
  5. Let It Rest and Serve: Remove the casserole from the oven and allow it to rest for 5-10 minutes. This helps it set slightly and makes slicing easier. Garnish as desired and serve warm.

Notes

  • Use thick bread slices to maintain structure and avoid sogginess.
  • Butter the bread generously for a perfect golden grilled texture.
  • Choose flavorful cheeses that melt well; blending cheeses adds complexity.
  • If tomato soup is overly thick, thin with a little broth or milk before mixing.
  • Letting the casserole rest before serving improves texture and flavor melding.
  • For vegan or gluten-free adaptations, substitute appropriate ingredients accordingly.
  • Add cooked bacon, ham, or shredded chicken between layers for extra protein.
