Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Vegetables and Herbs

  • 2 ears fresh corn on the cob
  • 1 cup cherry tomatoes, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro or parsley, roughly chopped

Dressing and Seasonings

  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and a drizzle of olive oil. Heat your grill or grill pan to medium-high heat. Grill the chicken for 5-7 minutes on each side, until nicely charred and cooked through. Let the chicken rest briefly before slicing it thinly.
  2. Grill the Corn: While the chicken is cooking, grill the corn on the cob until gently charred and tender, turning occasionally. Once cooled, slice the kernels off the cob and set them aside.
  3. Chop Veggies and Herbs: Dice the cherry tomatoes, thinly slice the red onion, and roughly chop the fresh cilantro or parsley. These fresh ingredients will add vibrant color and flavor to the salad.
  4. Assemble the Salad: In a large bowl, combine the grilled chicken slices, sweet corn kernels, chopped vegetables, and herbs. Drizzle with olive oil and freshly squeezed lime juice. Season with salt and pepper to taste, then toss gently to combine.

Notes

  • Marinate the chicken in lime juice and olive oil for 30 minutes before grilling to enhance flavor.
  • Do not overcook the chicken to keep it juicy and tender.
  • Use fresh, in-season corn for the sweetest flavor and best texture.
  • Taste and adjust seasoning with salt, pepper, and lime juice as needed.
  • Serve the salad slightly warm or at room temperature to maintain vibrant flavors.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days; keep dressing separate to prevent sogginess.
  • Avoid freezing the salad to preserve texture, especially of tomatoes and corn.
  • For reheating, gently warm the chicken separately and combine with fresh veggies before serving; avoid microwaving the full salad.
