Ingredients

Scale

Sausages and Buns

  • 4 Argentine-style pork choripan sausages or smoked sausages
  • 4 fresh sandwich buns or rustic rolls, toasted

Chimichurri Sauce

  • 1 cup fresh parsley, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 tablespoon fresh oregano, finely chopped
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • Salt and black pepper to taste

Toppings

  • 1 medium red onion, sliced (grilled or raw)
  • Optional: sliced tomatoes
  • Optional: lettuce leaves
  • Optional: pickles
  • Optional: sliced jalapeños or hot sauce for spice
  • Optional: sliced mozzarella or provolone cheese

Instructions

  1. Prepare the Chimichurri Sauce: In a bowl, finely chop fresh parsley, garlic, and oregano. Stir in red pepper flakes, red wine vinegar, olive oil, salt, and black pepper until well combined. Let the sauce rest at room temperature for at least 10 minutes to allow the flavors to meld beautifully.
  2. Preheat Your Grill: Light your grill and set it to medium-high heat (375–400°F). Clean and lightly oil the grill grates to prevent sausages from sticking.
  3. Grill the Sausages: Place the choripan sausages on the hot grill. Cook for 8–10 minutes, turning occasionally to ensure even browning and develop a smoky char. Use a meat thermometer to check doneness at 160°F (71°C).
  4. Toast the Buns: In the last few minutes of cooking, slice buns and place them face-down on the grill. Toast until golden brown but not burnt.
  5. Assemble the Burger: Place a grilled sausage on a toasted bun. Generously spoon chimichurri sauce over the sausage. Add grilled or raw red onions and any optional toppings like tomatoes, lettuce, pickles, jalapeños, or melted cheese. Close the burger and serve immediately for an explosion of bold flavor.

Notes

  • Choose fresh, well-seasoned sausages for best results.
  • Monitor grill time carefully to keep sausages juicy and avoid overcooking.
  • Allow chimichurri sauce to rest for at least 10 minutes to deepen flavor.
  • Use a meat thermometer to ensure sausages are cooked to a safe internal temperature of 160°F (71°C).
  • Prep toppings ahead of time to streamline assembly and maintain freshness.
  • Choripan sausages and chimichurri sauce can be stored refrigerated in airtight containers up to 3 days.
  • For freezing, wrap sausages individually and freeze for up to 2 months.
  • Reheat sausages gently on grill or skillet; warm chimichurri separately to retain flavor.
