Ingredients

Scale

Proteins

  • 1 lb ground chicken

Base and Aromatics

  • 1 tablespoon oil
  • 3 cloves garlic, finely chopped
  • 1 tablespoon fresh ginger, finely chopped

Currents and Sauces

  • 2 to 3 tablespoons Thai green curry paste (adjust based on spice preference)
  • 1 can (13.5-14 oz) full-fat coconut milk
  • 1 to 2 tablespoons fish sauce
  • 1 teaspoon brown sugar or palm sugar

Herbs and Citrus

  • Fresh Thai basil leaves, handful
  • 2 to 3 lime leaves or 1 teaspoon lime zest

Vegetables (Optional)

  • Bell peppers, sliced
  • Snap peas
  • Zucchini, sliced

Spices

  • Fresh chilies or chili flakes (to taste)

Instructions

  1. Prepare the Aromatics: Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Add finely chopped garlic and ginger and sauté for 1 to 2 minutes until fragrant and golden to create the aromatic base of your curry.
  2. Cook the Ground Chicken: Add the ground chicken to the pan, breaking it apart with a spatula. Cook thoroughly until no longer pink, letting it absorb the garlic and ginger flavors.
  3. Add Green Curry Paste: Stir in 2 to 3 tablespoons of green curry paste based on your desired spice level. Cook for an additional minute to release the paste’s essential oils and deepen the flavor.
  4. Pour in Coconut Milk: Add one can of full-fat coconut milk to the skillet and stir to combine, creating a creamy curry sauce. Let it simmer gently for 5 to 7 minutes to meld flavors and slightly thicken the sauce.
  5. Season and Add Vegetables: Add any fresh vegetables like bell peppers or snap peas, fish sauce, a pinch of sugar, and lime leaves or zest. Stir and simmer until the vegetables are tender yet crisp and the seasoning is well balanced.
  6. Finish with Fresh Herbs: Turn off the heat and fold in fresh Thai basil leaves for a bright, peppery flavor. Taste and adjust seasoning as needed before serving.

Notes

  • Use fresh herbs and quality green curry paste for authentic flavor.
  • Adjust green curry paste and sugar amounts to balance heat and sweetness.
  • Don’t skip Thai basil—it adds a unique and authentic aroma.
  • Simmer gently to keep coconut milk smooth and prevent separation.
  • For larger batches, cook ground chicken separately before combining.
