Ingredients

Scale

Main Ingredients

  • 1 lb lean ground turkey
  • 2 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Peanut Sauce

  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon lime juice
  • 23 tablespoons warm water (to thin sauce)
  • 1/4 teaspoon chili flakes or sriracha (optional)

Aromatics and Garnishes

  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • Sesame seeds or crushed peanuts (optional)

Instructions

  1. Roast the Sweet Potatoes: Peel and cube the sweet potatoes. Toss them with olive oil, salt, and a pinch of pepper. Spread evenly on a baking sheet and roast in a preheated oven at 425°F (220°C) for 25-30 minutes, flipping halfway through, until tender and golden.
  2. Cook the Ground Turkey: While the sweet potatoes roast, heat a skillet on medium heat and add a splash of oil. Sauté minced garlic and ginger until fragrant. Add ground turkey, breaking it up with a spatula, cook until browned and no longer pink. Season with salt and a bit of soy sauce to deepen the flavor.
  3. Prepare the Peanut Sauce: In a small bowl, whisk together peanut butter, soy sauce or tamari, lime juice, and warm water to reach a smooth, silky consistency. Add chili flakes or sriracha if you desire some heat. Adjust the seasoning to balance savory, tangy, and nutty flavors.
  4. Assemble the Bowls: Divide roasted sweet potatoes and cooked turkey into serving bowls. Drizzle generously with the peanut sauce. Top with sliced green onions, chopped cilantro, and optional sesame seeds or crushed peanuts for added crunch and nuttiness.

Notes

  • Don’t skip the lime juice—it brightens the peanut sauce and enhances the overall flavor.
  • Cook turkey in batches if making a large quantity to avoid overcrowding and ensure proper browning.
  • Use warm water to thin the peanut sauce for a smoother blend than cold water.
  • Cut sweet potatoes into uniform pieces to roast evenly.
  • Always garnish with fresh cilantro and green onions for added freshness and color.
