Instructions

  2. Shape and chill: Using your hands or a small cookie scoop, form the coconut mixture into small rectangular bars or oval shapes, each about the size of a classic Almond Joy. Place them on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  3. Add almonds: Once chilled, gently press a whole almond into the top of each coconut bar to mimic the iconic look and add crunch.
  4. Melt the chocolate: In a heatproof bowl, melt the chocolate chips with butter or coconut oil using a double boiler or microwave in short bursts. Stir frequently to prevent burning and achieve a smooth, glossy melt.
