Scale

Crust Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, chilled and cut into cubes
  • 2 egg yolks

Filling Ingredients

  • 3/4 cup honey
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts

Instructions

  1. Prepare the Tart Crust: Mix all-purpose flour, granulated sugar, and salt in a bowl. Cut in chilled unsalted butter until the mixture resembles coarse crumbs. Gradually add egg yolks and combine just until the dough comes together. Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes before rolling out.
  2. Roll and Bake the Crust: On a lightly floured surface, roll the chilled dough into a circle to fit your tart pan. Press the dough into the pan, trim excess edges, and prick the bottom with a fork. Bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until the edges turn golden.
  3. Prepare the Honey Walnut Filling: While the crust cools, toast the chopped walnuts in a dry skillet over medium heat until fragrant, about 3-5 minutes. In a saucepan, combine honey, heavy cream, and vanilla extract over low heat, stirring occasionally until smooth and slightly thickened. Remove from heat and fold in the toasted walnuts.
  4. Assemble and Bake the Tart: Pour the honey walnut mixture evenly into the pre-baked crust. Return the tart to the oven and bake for an additional 10-12 minutes until the filling sets. Let the tart cool completely to allow the glaze to firm up before serving.

Notes

  • Chill your dough well to prevent shrinkage and ensure a crisp, flaky crust.
  • Use fresh walnuts and toast them to enhance their natural oils and flavor.
  • Don’t overbake the filling; aim for a soft set to keep it luscious.
  • Use a removable bottom tart pan or line with parchment paper for easy removal.
  • Allow the tart to cool completely before slicing to maintain neat pieces.
