  • 68 slices provolone or mozzarella cheese

Instructions

  1. Prep the Sausage and Peppers: Slice bell peppers and onion into thin strips for even cooking. Remove sausage from casing if desired or leave whole. Mince garlic finely to release flavor.
  2. Cook the Sausage: Heat a large skillet over medium heat and brown the sausage links until fully cooked and edges slightly crisp. Remove from skillet, let rest, then slice into rounds if cooked whole.
  3. Sauté the Peppers and Onions: In the same skillet, add olive oil and sauté sliced peppers and onions for 8-10 minutes until softened and lightly caramelized. Stir in minced garlic in the last 2 minutes to prevent burning.
  4. Combine Sausage and Peppers: Return cooked sausage to the skillet with the peppers and onions. Toss together and heat for 2 more minutes, seasoning with salt, pepper, and optional red pepper flakes.
  5. Assemble the Subs: Slice the sub rolls lengthwise, leaving one side connected. Fill rolls generously with the sausage and pepper mixture, then layer slices of provolone or mozzarella cheese on top. Place subs under a broiler or in a hot oven for a few minutes until cheese melts and rolls toast slightly.
  6. Serve and Enjoy: Remove from heat and serve immediately for a warm, melty, and comforting bite.
