Ingredients

Scale

Steak

  • 1 to 1.5 lbs ribeye, sirloin, or filet mignon steak
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tbsp olive oil

Creamy Garlic Sauce

  • 3 tbsp butter
  • 34 garlic cloves, minced
  • 1/4 cup white wine or broth (optional)
  • 1 cup heavy cream
  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and pepper, to taste

Optional Variations

  • Red pepper flakes or smoked paprika, to taste (for a spicy twist)
  • Coconut cream and vegan butter (for dairy-free version)
  • 1 cup mushrooms, sliced (for mushroom addition)
  • Other fresh herbs like rosemary or chives
  • Sautéed shrimp or scallops (for surf & turf)

Instructions

  1. Prepare the Steak: Bring the steak to room temperature for 20-30 minutes to ensure even cooking. Pat the steak dry with paper towels and season both sides generously with salt and freshly ground black pepper.
  2. Sear the Steak: Heat a heavy skillet or cast-iron pan over medium-high heat and add olive oil. When the oil is shimmering hot, place the steak in the pan. Sear for 3-4 minutes per side for medium-rare, adjusting time based on your preferred doneness. Avoid moving the steak to develop a caramelized crust. Remove the steak and transfer to a plate. Tent loosely with foil and rest.
  3. Make the Creamy Garlic Sauce: Lower the heat to medium and add butter to the same pan. Once melted, add minced garlic and sauté until fragrant but not browned, about 30 seconds. Deglaze the pan with white wine or broth if using, scraping up the browned bits. Pour in heavy cream and stir. Let the sauce simmer gently for 3-5 minutes until it thickens slightly.
  4. Finish the Sauce and Serve: Stir in freshly chopped parsley or thyme, then season with salt and pepper to taste. Spoon the creamy garlic sauce over the rested steak. Serve immediately for best flavor and presentation.

Notes

  • Let steak come to room temperature before cooking for uniform doneness.
  • Pat steak dry for a better sear and crust formation.
  • Cook steaks in batches if needed to avoid crowding the pan and ensure proper searing.
  • Use fresh garlic for the best aroma and flavor.
  • Rest the steak to allow juices to redistribute, resulting in tenderness.
  • Adjust sauce thickness by simmering longer to thicken or adding broth to thin.
