Ingredients

Scale

Pie Crust

  • 1 homemade or store-bought 9-inch pie crust

Filling

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup chopped pecans
  • 1/2 cup chopped mixed nuts (walnuts, hazelnuts, almonds)
  • 1/2 cup chocolate chips or chopped chocolate

Instructions

  1. Prepare Your Pie Crust: Roll out your pie crust and fit it into a 9-inch pie dish. Trim and crimp the edges as desired. Place the crust in the refrigerator to chill while you prepare the filling. Chilling helps the crust maintain its shape during baking.
  2. Mix the Filling Ingredients: In a large bowl, whisk together light corn syrup, brown sugar, eggs, melted butter, vanilla extract, and a pinch of salt until the mixture is smooth and well combined. This creates the classic sticky and sweet base for the pie.
  3. Add Nuts and Chocolate: Gently fold in the chopped pecans, mixed nuts, and chocolate chips or chopped chocolate. Stir carefully to evenly distribute the nuts and chocolate without breaking them up too much, ensuring a balanced texture throughout.
  4. Pour Filling into Crust: Pour the prepared filling evenly into the chilled pie crust. Spreading the filling out evenly helps the pie bake uniformly, providing a balanced bite of nuts and chocolate in every slice.
  5. Bake the Pie: Preheat your oven to 350°F (175°C). Bake the pie for 55 to 65 minutes, watching closely toward the end to prevent burning. The pie is done when the crust is golden brown and the filling is mostly set but still has a slight wobble in the center.
  6. Cool and Set: Remove the pie from the oven and let it cool completely at room temperature. Cooling allows the filling to solidify and the flavors to meld, making it easier to slice and serve.

Notes

  • Chill your pie crust before baking to prevent shrinking and ensure flaky layers.
  • Use fresh pecans and mixed nuts for optimal flavor and crunch.
  • Do not overbake; remove when the center is slightly jiggle-y to avoid dryness.
  • Optionally, spread some nuts evenly on top before baking for a textured surface.
  • Allow the pie to rest fully before slicing for clean, firm slices.
