Instructions

  1. Prepare the Filling: Start by cooking and shredding your chicken if it is not pre-cooked. Cook the bacon until crisp and chop it finely. In a mixing bowl, combine shredded chicken, chopped bacon, shredded cheese, cream cheese, ranch seasoning, garlic powder, salt, and pepper. Mix thoroughly until the filling is creamy and well blended.
  2. Assemble the Taquitos: Lay out the almond flour tortillas flat on a clean surface. Spoon an even amount of the chicken bacon ranch filling onto one end of each tortilla. Carefully roll the tortilla tightly around the filling, pressing the edges slightly together to seal and keep the filling contained during cooking.
  3. Cook Until Crispy: For skillet method, heat a small amount of oil over medium heat. Place the taquitos seam-side down in the skillet and cook until golden and crispy on all sides, turning carefully. For baking method, preheat your oven to 400°F (200°C). Arrange taquitos on a lined baking sheet and bake for 15–20 minutes until crispy and browned.
