Instructions

  1. Prepare the Potatoes: Wash, peel, and cut the russet potatoes into evenly sized fries. Soak them in cold water for at least 30 minutes to remove excess starch, which helps achieve maximum crispiness.
  2. Parboil the Fries: Bring a pot of salted water to a boil and add the cut potatoes. Parboil for 3-5 minutes until slightly tender but not fully cooked. This softens the interior and shortens cooking time.
  3. Dry and Season: Drain the fries thoroughly and dry completely with a kitchen towel to prevent sogginess. Toss the fries in 2 tablespoons of olive oil, sea salt, and black pepper to season.
  4. Bake or Fry the Fries: For baking, arrange the fries in a single layer on a lined baking sheet and bake at 425°F (220°C) for 25-30 minutes, flipping halfway through. For frying, heat oil to 350°F (175°C) and fry the potatoes in batches for 3-4 minutes until golden and crispy.
  5. Make the Garlic Herb Mixture: While the fries cook, mix the minced garlic, chopped parsley, grated Parmesan, a pinch of salt, and 1 tablespoon olive oil in a bowl.
  6. Toss and Serve: Once fries are hot and crispy, immediately toss with the garlic herb mixture so the fries absorb the flavors. Serve warm for the best taste and texture.
