Ingredients

Scale

Base Ingredients

  • 1 box lemon cake mix (approx. 15.25 oz)
  • 2 large eggs
  • 1/2 cup melted butter or oil

Optional Ingredients

  • Powdered sugar for dusting or mixing in (about 1/4 cup)
  • 1 tablespoon lemon zest or 12 tablespoons lemon juice
  • 1/2 cup white chocolate chips (optional)
  • 1 tablespoon poppy seeds (optional)
  • Lemon glaze (made from powdered sugar and lemon juice) for drizzling (optional)
  • 12 teaspoons finely chopped fresh herbs like rosemary or thyme (optional)

Instructions

  1. Gather and prepare your ingredients: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat. Measure and prepare all your ingredients so you can mix smoothly without interruption.
  2. Mix the dough: In a large bowl, combine the lemon cake mix, eggs, and melted butter or oil. Stir until the mixture is smooth and well-incorporated, ensuring no dry pockets of cake mix remain.
  3. Add optional flavor boosts: If you want extra zest, stir in lemon juice or zest now along with any add-ins like white chocolate chips, poppy seeds, or fresh herbs. Customize the cookie flavor to your liking!
  4. Shape the cookies: Use a spoon or cookie scoop to drop rounded balls of dough onto the prepared baking sheet, spacing them about two inches apart to allow for spreading.
  5. Bake and cool: Bake for about 10 to 12 minutes or until edges are set and cookies have a light golden hue. Remove from the oven and let them cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • Use room temperature eggs and butter to help ingredients blend smoothly for a uniform dough.
  • Stir just enough to combine ingredients; overmixing can toughen cookies.
  • Refrigerate the dough for 30 minutes before baking for thicker cookies with less spreading.
  • Watch baking time closely; cookies should be soft when removed from the oven to avoid overbaking.
  • Add lemon zest after mixing dry ingredients to preserve fresh citrus flavor without bitterness.
  • Store cookies in an airtight container with a slice of bread to maintain moisture and chewiness longer.
