Instructions

  1. Step 1: Prep Your Ingredients – Finely dice the onions, carrots, and celery. Mince the garlic and zest the lemons. Cut the chicken into bite-sized pieces and set everything aside so it’s ready to go.
  2. Step 2: Sauté the Vegetables – Heat olive oil in a large pot over medium heat. Add the onions, carrots, and celery, cooking until softened and fragrant, about 5-7 minutes. Then add the garlic and sauté for another minute.
  3. Step 3: Cook the Chicken – Push the vegetables to the side and add the chicken pieces. Cook until they are just browned on the outside but not fully cooked through, approximately 4-5 minutes. This step locks in flavor and tenderness.
  4. Step 4: Add Broth and Simmer – Pour in the chicken broth and bring everything to a gentle boil. Reduce heat and let it simmer for about 10 minutes to allow the flavors to meld and the chicken to cook thoroughly.
