Ingredients

Scale

Main Ingredients

  • 1 cup long-grain rice (white or basmati)
  • 2 tablespoons olive oil or butter
  • 2 cloves garlic, minced
  • 2 cups vegetable or chicken broth
  • Juice of 1 fresh lemon
  • Zest of 1 lemon
  • 1/2 cup chopped fresh herbs (such as parsley, dill, or cilantro)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Rinse and Prep the Rice: Rinse one cup of long-grain rice under cold water until the water runs clear. This removes excess starch, preventing clumping and ensuring fluffy, separated grains after cooking.
  2. Sauté Garlic in Olive Oil or Butter: Heat two tablespoons of olive oil or butter in a medium saucepan over medium heat. Add two cloves of minced garlic and cook for about 1 minute until fragrant but not browned, infusing the oil with savory aroma.
  3. Toast the Rice: Add the rinsed rice to the pan and stir for two minutes to coat the grains in the garlic-infused oil. Toasting enhances the rice’s nuttiness and adds depth to the overall flavor.
  4. Add Broth and Simmer: Pour in two cups of vegetable or chicken broth and bring to a boil. Once boiling, reduce heat to low, cover, and let the rice simmer for 15-20 minutes until all the liquid is absorbed and the rice is tender.
  5. Fluff and Add Lemon Herb Mixture: Remove the lid, fluff the rice gently with a fork, then stir in the zest and juice of one lemon along with half a cup of chopped fresh herbs. Season with salt and pepper to taste for a bright, fresh finish.
  6. Serve Warm: Transfer the Lemon Herb Rice to a serving bowl and garnish as desired with extra herbs, lemon zest, or toasted nuts to enhance aroma and presentation.

Notes

  • Rinse your rice well to ensure cleaner flavor and prevent mushiness.
  • Use fresh lemon juice and zest for the best brightness and aroma.
  • Cook the rice in broth instead of water for richer flavor.
  • Avoid over-stirring after cooking to prevent sticky rice.
  • Let the rice rest covered off heat for 5 minutes for ideal texture.
  • Chop herbs finely to distribute flavor evenly without overpowering.
