Ingredients

Main Ingredients

  • Fresh lobster meat (cooked and chopped or chunked) – about 1 to 1.5 pounds
  • Buttered split rolls (New England style) – 4 rolls

Condiments & Seasonings

  • Mayonnaise or melted butter – 1/4 to 1/3 cup, depending on style
  • Lemon juice – 1 to 2 tablespoons
  • Celery – 2 tablespoons finely chopped
  • Fresh herbs (dill, chives, parsley) – 1 to 2 tablespoons finely chopped
  • Salt – to taste
  • Black pepper – to taste
  • Paprika or Old Bay seasoning (optional) – a pinch

Instructions

  1. Cook and Prepare Lobster: Boil or steam fresh lobsters until shells turn bright red and meat is tender. Cool, then carefully extract meat from claws and tails. Chop meat into bite-sized chunks and drain any excess liquid.
  2. Toast the Rolls: Butter each side of the split rolls generously. Toast on a hot skillet over medium heat until golden brown and crispy, creating a crunchy, flavorful base.
  3. Mix Lobster Filling: In a mixing bowl, combine lobster meat with mayonnaise or melted butter, lemon juice, finely chopped celery, fresh herbs, salt, and pepper. Stir gently to coat the lobster without breaking up the chunks. Adjust seasoning as needed.
  4. Assemble the Lobster Rolls: Spoon the lobster mixture carefully into the toasted rolls, filling generously but not overstuffing. Add a light squeeze of fresh lemon juice on top for brightness.
  5. Serve Immediately: Enjoy the lobster rolls fresh with your favorite side dishes or garnishes for an ultimate seafood experience.

Notes

  • Choose the freshest lobster possible, preferably live or just cooked, for maximum flavor and tenderness.
  • Handle lobster meat gently and avoid overmixing to keep nice chunks intact.
  • Use quality split rolls that toast well with a crispy outside and soft inside.
  • Drain lobster meat well and control mayo or butter quantity to prevent soggy rolls.
  • Experiment with different fresh herbs such as dill or tarragon to enhance flavor.
