Ingredients

Scale

Basic Ingredients

  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (or gluten-free flour substitute for gluten-free version)
  • 2 cups whole milk (or combination of milk and cream)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon mustard powder (optional)

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta and set it aside while you prepare the cheese sauce.
  2. Make the Roux: In a medium saucepan, melt the butter over medium heat. Once melted, sprinkle in the flour and whisk continuously for about 2 minutes to cook off the raw flour taste and create a smooth paste called a roux.
  3. Add Milk and Thicken: Slowly pour in the milk while whisking constantly to avoid lumps. Continue to cook and stir until the sauce thickens and starts to bubble gently, about 5-7 minutes.
  4. Melt the Cheese: Lower the heat and add shredded cheddar cheese to the sauce. Stir until the cheese melts completely, creating a creamy and luscious cheese sauce. Season with salt, pepper, and a pinch of mustard powder if using.
  5. Combine Pasta and Sauce: Pour the drained pasta into the cheese sauce and gently stir until every piece is coated evenly. Your creamy Mac and Cheese is now ready to serve, or you can transfer it to a baking dish for a golden crust on top.

Notes

  • Use sharp cheddar for a deeper, more flavorful cheese sauce.
  • Don’t skip making the roux; it prevents a watery sauce and ensures creaminess.
  • Grate your own cheese for better melting and texture.
  • Cook pasta al dente so it absorbs the sauce without becoming mushy.
  • Melt cheese off the heat or on low heat to avoid graininess.
