Instructions

  1. Prepare the Potatoes: Dice potatoes into small, even cubes. Toss with a little oil and season with salt and pepper. Cook in a hot skillet over medium heat for about 15 minutes, stirring occasionally, until golden and crispy outside and tender inside.
  2. Cook the Meat: In the same skillet or a separate pan, cook your chosen meat until browned and cooked through. Break sausage into small pieces as it cooks. Drain excess grease if necessary.
  3. Sauté the Vegetables: Add diced onions and bell peppers to the skillet and cook until softened and fragrant, enhancing sweetness and color.
  4. Combine Ingredients: Return the cooked meat to the skillet with the potatoes and vegetables. Mix gently to evenly distribute. Sprinkle in seasonings and fresh herbs as desired.
  5. Add the Eggs: Either crack eggs directly over the skillet to cook sunny side up, covering the skillet to cook through, or scramble eggs separately and pour over the mixture.
  6. Finish with Cheese: Sprinkle shredded cheese on top and cover the skillet for 2–3 minutes to melt. Remove from heat and prepare to serve.
