Ingredients

Scale

Proteins

  • 1 lb boneless, skinless chicken breasts or thighs

Vegetables and Aromatics

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 4 medium fresh tomatoes, chopped (or 1 can diced tomatoes, 14 oz)
  • 2 cups kale or spinach, chopped

Liquids and Seasonings

  • 6 cups chicken broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon lemon juice (freshly squeezed)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Step 1: Sauté the aromatics – Heat olive oil in a large pot over medium heat. Add the diced onions, minced garlic, chopped carrots, and celery. Cook, stirring occasionally, until the vegetables soften and become fragrant, about 5-7 minutes. This forms the flavorful base for the soup.
  2. Step 2: Add chicken and herbs – Place the chicken pieces into the pot. Sprinkle dried oregano, thyme, salt, and pepper over the chicken and vegetables. Cook for 4-5 minutes, stirring occasionally, to seal the chicken and infuse it with the herbs’ aroma.
  3. Step 3: Pour in broth and tomatoes – Stir in the chicken broth and chopped fresh tomatoes (or canned tomatoes). Bring the mixture to a gentle simmer to allow the flavors to meld and the chicken to begin tenderizing.
  4. Step 4: Cook until tender – Let the soup simmer gently for 25 to 30 minutes, or until the chicken is fully cooked and the vegetables are tender. Remove the chicken pieces, shred them finely with forks, and return the shredded chicken to the pot for even distribution.
  5. Step 5: Add the greens and finish – Stir in the chopped kale or spinach and cook just until wilted, about 2-3 minutes. Finish by squeezing in fresh lemon juice to brighten the flavors. Adjust seasoning with salt and pepper as needed before serving.

Notes

  • Use homemade chicken broth when possible for deeper flavor.
  • Add greens last to avoid overcooking and maintain bright color.
  • Gradually adjust salt and lemon juice while cooking to balance flavor.
  • Shred the chicken finely for consistent texture throughout the soup.
  • Fresh herbs like oregano or thyme elevate the aroma and taste if available.
