Instructions

  1. Prepare the Meat Mixture: In a large bowl, gently combine the ground meat, bread crumbs, beaten egg, minced garlic, chopped onions, fresh herbs, salt, and pepper. Mix just until evenly combined, being careful not to overwork the mixture to maintain tenderness.
  2. Shape the Meatballs: Take a small handful of the meat mixture and flatten it in your palm. Place a small cube or a chilled piece of mozzarella cheese in the center, then carefully wrap the meat around the cheese, rolling between your palms to form a smooth, evenly-sized ball. Ensure the cheese is fully sealed inside to prevent leaking.
  3. Brown the Meatballs: Heat olive oil in a skillet over medium heat. Add the meatballs in batches, avoiding overcrowding, and cook until golden brown on all sides, turning frequently to lock in juices and create a crisp exterior.
  4. Bake or Simmer in Sauce: Transfer browned meatballs to a baking dish and bake in a preheated oven at 375°F (190°C) for 15-20 minutes until cooked through. Alternatively, gently simmer the browned meatballs in tomato sauce on the stove until fully cooked and the cheese filling is melted.
  5. Serve and Enjoy: Allow the meatballs to rest briefly after cooking to seal in juices. Serve them topped with fresh herbs and grated Parmesan, alongside pasta, garlic bread, or as finger food with dipping sauces.
