Ingredients

Mushroom Filling

  • Fresh Mushrooms (cremini or button) – 8 oz (about 225 g), finely chopped
  • Garlic Cloves – 2 cloves, minced
  • Onion – 1 small, finely chopped
  • Olive Oil or Butter – 1 tablespoon for sautéing
  • Heavy Cream or Crème Fraîche – 1/4 cup (60 ml)
  • Parmesan or Gruyère Cheese – 1/2 cup grated (about 50 g)
  • Fresh Thyme or Rosemary – 1 teaspoon, finely chopped
  • Salt – to taste
  • Black Pepper – to taste
  • Egg (for egg wash) – 1, beaten (optional, for brushing edges)

Instructions

  1. Prepare the Mushroom Filling: Finely chop mushrooms, onion, and garlic. Heat olive oil or butter in a skillet over medium heat, add onions and cook until translucent. Add garlic and mushrooms, sauté until mushrooms release moisture and start to brown. Season with salt, pepper, and fresh herbs. Stir in heavy cream, simmer until slightly thickened, then remove from heat.
  2. Preheat the Oven and Prepare Puff Pastry: Preheat oven to 400°F (200°C). Roll out puff pastry on a lightly floured surface and cut into squares or circles. Place on parchment-lined baking tray, prick centers with fork (not edges), and brush borders lightly with beaten egg for a golden finish.
  3. Assemble the Tarts: Spoon mushroom filling on the center of each pastry piece, leaving a border around edges. Sprinkle grated Parmesan or Gruyère cheese over the filling.
  4. Bake Until Golden and Crisp: Bake for 15-20 minutes until puff pastry is puffed and golden, cheese melted and bubbly. Remove from oven and let cool slightly before serving.
