No Bake Chocolate Coconut Date Balls

No Bake Chocolate Coconut Date Balls are a quick, healthy, and delicious snack combining the natural sweetness of dates, rich cocoa, crunchy coconut, and nuts, perfect for a guilt-free treat without any baking required.

Ingredients

Scale

Ingredients

  • 1 cup Medjool Dates, pitted
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/2 cup Shredded Coconut, plus extra for coating
  • 1/2 cup Chopped Nuts (walnuts, almonds, or pecans)
  • 1 teaspoon Vanilla Extract
  • Pinch of Sea Salt

Instructions

  1. Prepare the Dates: Pit your Medjool dates and soak them in warm water for about 10 minutes if they are dry to soften them and enable a smooth blend.
  2. Blend the Ingredients: In a food processor, combine the soaked dates, cocoa powder, shredded coconut, chopped nuts, vanilla extract, and sea salt. Pulse until the mixture comes together and is sticky enough to form balls.
  3. Form the Balls: Use a spoon or your hands to scoop out small portions of the mixture, rolling them into uniform balls roughly the size of a walnut.
  4. Coat and Chill: Roll the balls in extra shredded coconut or cocoa powder for a decorative finish. Place them in the refrigerator for at least 30 minutes to firm up before serving.

Notes

  • Choose soft, fresh Medjool dates for easier blending and better texture.
  • Pulse in the food processor instead of over blending to maintain a pleasing texture without turning the mixture into paste.
  • Chill the balls adequately to firm them up for easier handling and enhanced taste.
  • Freeze for 15 minutes if you prefer a firmer bite.
  • Dampen your hands slightly when rolling to prevent sticking and create smooth balls.
