Scale

Main Ingredients

  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup brown sugar, packed
  • 1 large egg (room temperature)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Prepare your ingredients: Measure out all ingredients carefully. Let butter soften to room temperature for easier mixing. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream butter and sugar: In a large bowl, beat softened butter and brown sugar together until light and fluffy, about 2–3 minutes with a mixer or vigorous hand stirring.
  3. Add egg and vanilla: Mix in the egg and vanilla extract until fully combined, creating a smooth, aromatic base for your cookies.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, cinnamon (if using), and oats to evenly distribute all dry elements.
  5. Mix dry into wet: Gradually fold the dry ingredients into the wet mixture, mixing just until everything is incorporated without overworking the dough.
  6. Add mix-ins: At this stage, gently fold in nuts, dried fruits, or chocolate chips if you want to customize your oatmeal cookies.
  7. Scoop and bake: Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 10–12 minutes until edges are golden and centers set but still soft.
  8. Cool and enjoy: Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely—this helps them set perfectly.

Notes

  • Room temperature ingredients: Ensure butter and egg are at room temperature to blend seamlessly.
  • Don’t overmix: Fold dry ingredients gently to keep cookies tender, avoiding gluten development.
  • Use fresh oats: Old oats can be stale; fresh oats deliver the best texture and flavor.
  • Chill the dough: For thicker cookies, refrigerate the dough for 30 minutes before baking.
  • Watch baking time: Slightly underbake for extra chewiness as cookies firm up while cooling.
