Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces

Grains

  • 1 cup long grain white rice

Vegetables

  • 1 cup bell peppers, chopped (any color)
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 cup diced tomatoes with juices
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Spices & Flavorings

  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Prepare Your Ingredients: Wash and chop the bell peppers, dice the onion and garlic, and cut the chicken into bite-sized pieces to ensure uniform cooking.
  2. Sauté Chicken and Aromatics: Heat olive oil in a large pan over medium-high heat. Add the chicken pieces seasoned with salt, pepper, chili powder, and cumin. Cook until lightly browned on all sides. Then add the diced onion and minced garlic, stirring until fragrant and translucent.
  3. Add Rice and Veggies: Stir in the rice, bell peppers, black beans, corn kernels, and diced tomatoes along with their juices. Mix everything well to coat the rice in the spices and allow the ingredients to meld together.
  4. Cook Simmer Until Rice is Tender: Pour in 2 cups of water or chicken broth, cover the pan, and reduce heat to a simmer. Cook for about 15-20 minutes or until the rice is tender and the liquid has been absorbed.
  5. Finish with Lime and Cilantro: Remove from heat, squeeze fresh lime juice over the cooked mixture, and sprinkle with chopped cilantro for a bright, fresh finish before serving.

Notes

  • Use chicken thighs for moister, more flavorful results.
  • Toast the rice lightly in the pan before adding liquids for a subtle nutty flavor.
  • Use chicken broth instead of water to enhance richness and prevent sogginess.
  • Prep all ingredients ahead of time to speed up cooking.
  • Let the finished dish rest covered for 5 minutes to allow flavors to meld.
