Ingredients

Scale

Main Ingredients

  • 4 large bell peppers (red, yellow, or green)
  • 12 oz ribeye or sirloin beef, thinly sliced
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 4 oz mushrooms, sliced
  • 4 slices provolone or American cheese
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Prepare the Peppers: Cut the tops off the bell peppers and carefully remove the seeds and membranes without breaking the walls. Set aside the hollow peppers to be stuffed later.
  2. Cook the Beef and Vegetables: Heat olive oil or butter in a hot skillet. Add the thinly sliced ribeye or sirloin and cook until just browned. Remove the beef and set aside. In the same skillet, sauté onions, green bell pepper, garlic (if using), and mushrooms until softened and caramelized.
  3. Mix the Filling: Return the cooked beef to the skillet and combine with the sautéed vegetables. Season with salt and black pepper to taste, stirring well to blend all the savory flavors.
  4. Stuff the Peppers: Generously fill each hollowed bell pepper with the beef and vegetable mixture. Top each with a slice of provolone or American cheese, pressing down lightly to secure the cheese.
  5. Bake to Perfection: Arrange the stuffed peppers upright in a baking dish, cover loosely with foil, and bake at 375°F (190°C) for 25-30 minutes, until the peppers are tender and the cheese is melted and bubbly.
  6. Serve Warm: Remove from the oven and allow to cool slightly before serving. Enjoy the melty cheese, juicy beef, and tender peppers for a satisfying bite every time.

Notes

  • Use quality thinly sliced ribeye or sirloin for the best texture and authentic cheesesteak flavor.
  • Do not overcook the peppers; they should be tender but firm enough to hold the filling during baking.
  • Sauté vegetables separately to achieve soft, caramelized textures and a sweet contrast to the savory beef.
  • Season generously with salt and pepper, tasting the filling as you go for balanced flavors.
  • Sharp provolone or aged cheddar cheese can be used for extra depth of flavor.
