Scale

Main Ingredients

  • 812 potstickers (fresh or frozen)
  • 4 cups chicken or vegetable broth
  • 2 cups fresh spinach leaves
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 green onions, sliced

Instructions

  1. Prepare the Broth: In a large pot, bring 4 cups of chicken or vegetable broth to a gentle boil over medium heat. Add the minced garlic and ginger to infuse the broth with aromatic flavors.
  2. Cook the Potstickers: Carefully add 8-12 potstickers to the simmering broth. Cook according to package instructions, generally 6 to 8 minutes, until the potstickers float and are fully cooked inside.
  3. Add the Spinach: Once the potstickers are nearly done, stir in 2 cups of fresh spinach leaves. Let them wilt gently in the hot soup for about 2 minutes, preserving their bright color and nutrients.
  4. Season the Soup: Mix in 2 tablespoons of soy sauce or tamari to enhance the umami flavor of the broth. Taste and adjust seasoning with salt or additional soy sauce as needed.
  5. Garnish and Serve: Ladle the soup into bowls and sprinkle sliced green onions on top for freshness and a slight crunch. Serve hot and enjoy.

Notes

  • Use fresh potstickers when possible as they cook faster and provide a softer texture.
  • Do not overcook the spinach; add it last to retain its vibrant color and texture.
  • For deeper flavor, sauté garlic and ginger briefly in a small amount of oil before adding broth.
  • To thicken the broth slightly, mix 1 teaspoon cornstarch with water and add to soup.
  • Ensure potstickers are fully cooked by slicing one open to check inside.
