Ingredients

Scale

Pastry

  • 1 sheet puff pastry (store-bought or gluten-free alternative)

Apple Filling

  • 2 firm apples (Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 2 tablespoons brown sugar (divided)
  • 1 teaspoon pumpkin pie spice (divided)

Pumpkin Filling

  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon brown sugar
  • 1 teaspoon pumpkin pie spice

Finishing

  • 1 egg, beaten (for egg wash)

Instructions

  1. Prepare the Apples: Peel, core, and thinly slice the apples into even pieces. Toss the slices with lemon juice to prevent browning, then mix in 1 tablespoon of brown sugar and half the pumpkin pie spice to coat evenly and infuse autumn flavor.
  2. Mix the Pumpkin Filling: In a bowl, combine pumpkin puree, vanilla extract, remaining pumpkin pie spice, and 1 tablespoon brown sugar. Stir until smooth and well mixed to create a creamy, spiced filling.
  3. Assemble the Danish: Roll out the puff pastry on a lightly floured surface and cut into squares of desired size. Spoon an even layer of pumpkin filling onto each square. Arrange the apple slices on top of the pumpkin filling, leaving a border around the edges to fold over or create a framed edge.
  4. Apply Egg Wash and Bake: Brush the exposed pastry edges generously with beaten egg for a golden, shiny finish. Place the assembled danishes on a baking sheet lined with parchment paper and bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the pastry is puffed, golden, and the filling is bubbling.
  5. Cool and Serve: Remove the danishes from the oven and allow them to cool slightly so the filling sets. Serve warm or at room temperature for the best texture and flavor.

Notes

  • Chill the puff pastry before assembling to maintain flaky layers.
  • Slice apples uniformly thin for even cooking.
  • Avoid overfilling the danish to prevent sogginess.
  • Brush pastry edges thoroughly with egg wash to seal and enhance browning.
  • Use fresh pumpkin pie spice for vibrant flavor.
