Instructions

  1. Prepare the Batter: In a mixing bowl, whisk together rice flour, tapioca starch, salt, and vegetable oil. Gradually add water, stirring until the mixture is smooth and free of lumps. Allow the batter to rest for 10-15 minutes to fully hydrate. The consistency should resemble thin pancake batter.
  2. Set Up a Steaming Station: Fill a large pot or wok with water and bring it to a boil. Prepare a flat, heatproof tray or non-stick pan that fits inside the steamer or over steaming racks, ensuring steam can circulate well under the tray.
  3. Steam the Noodle Sheets: Lightly brush the tray with vegetable oil to prevent sticking. Pour a thin, even layer of batter onto the tray, enough to cover the surface. Cover with a lid and steam for 2-3 minutes, until the noodle sheet turns translucent and is cooked through but remains soft.
  4. Add Fillings and Roll: Immediately remove the steamed noodle sheet and transfer it onto a lightly oiled work surface. Place your chosen fillings near one edge of the sheet. Carefully roll the noodle sheet over the fillings to form a roll, handling gently to prevent tearing.
  5. Serve with Sauce: Arrange the rolls on a serving plate. Drizzle with soy sauce or sweetened soy sauce, and add chili oil or fresh herbs if desired. Serve warm and enjoy!
