Ingredients

Scale

Main Ingredients

  • Fresh broccoli crowns (about 1.5 pounds), firm and vibrant green
  • 23 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Optional Seasonings & Garnishes

  • Garlic powder, 1/2 teaspoon (optional)
  • Lemon zest or juice, from 1 lemon (optional)
  • Red pepper flakes, 1/4 teaspoon (optional)
  • Grated Parmesan or nutritional yeast, 2 tablespoons (optional)
  • Other optional toppings: toasted almonds or pine nuts, freshly chopped herbs (thyme, rosemary, parsley), sesame oil and toasted sesame seeds, soy sauce

Instructions

  1. Prep Your Broccoli: Start by washing the broccoli thoroughly and drying it completely with a kitchen towel or salad spinner to ensure crispiness. Cut the crowns into evenly sized florets so they cook uniformly. Peel and chop the stalks as well, as they roast deliciously alongside the florets.
  2. Toss with Olive Oil and Seasonings: In a large bowl, combine the broccoli florets and stalk pieces with olive oil, salt, black pepper, and any desired additional seasonings such as garlic powder. Toss well until every piece is lightly coated for even caramelization.
  3. Arrange on a Baking Sheet: Spread the broccoli evenly in a single layer on a baking sheet lined with parchment paper for easy cleanup. Avoid overcrowding to allow hot air to circulate around each piece, which promotes crispiness.
  4. Roast Until Golden and Crispy: Preheat the oven to 425°F (220°C). Roast the broccoli for 20-25 minutes, flipping the florets halfway through to ensure even browning. Watch the tips closely during the last few minutes to prevent burning.
  5. Add Finishing Touches: Remove the broccoli from the oven and while still hot, add any finishing garnishes such as lemon zest or juice, red pepper flakes, grated Parmesan, or toasted nuts. Toss gently and serve immediately for the best flavor and texture.

Notes

  • Use dry broccoli: Ensure broccoli florets are completely dry before roasting to avoid sogginess and maximize crispiness.
  • Cut broccoli evenly: Uniform size helps the broccoli cook at the same rate.
  • High heat roasting at 425°F encourages caramelization and crispy edges.
  • Do not overcrowd the pan: Spread the broccoli in a single layer for proper airflow.
  • Flip halfway through roasting for an even golden crust.
  • Experiment with seasonings and toppings to customize flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat gently in a skillet or oven at 375°F to maintain crispiness.
  • If freezing, freeze cooled broccoli spread on a baking sheet before transferring to airtight bags to avoid clumping.
