Ingredients

Scale

Meatballs

  • 1 lb ground beef (80/20)
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Butter or oil for browning

Gravy

  • 1 cup sliced mushrooms
  • 1/2 cup chopped onions
  • 2 tablespoons flour (or gluten-free flour)
  • 2 cups beef broth
  • Butter or oil for sautéing

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground beef, breadcrumbs, finely chopped onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix gently but thoroughly until just combined to keep the meatballs tender.
  2. Form the Meatballs: Shape the mixture into equal-sized meatballs about 1.5 inches in diameter, ensuring they are compact but not overly compressed.
  3. Brown the Meatballs: Heat butter or oil in a skillet over medium heat. Carefully place meatballs in the pan and brown them evenly on all sides, sealing in juices. Do not cook through yet.
  4. Make the Gravy: In the same skillet, sauté sliced mushrooms and onions until softened. Sprinkle flour over the vegetables and stir well to coat. Gradually whisk in beef broth to create a thick, savory gravy.
  5. Simmer the Meatballs in Gravy: Return browned meatballs to the skillet with the gravy. Cover and simmer on low heat for 15-20 minutes until meatballs are cooked through and tender.

Notes

  • Do not overmix the meatball mixture to keep meatballs tender.
  • Use fresh onions, finely diced, and squeeze out excess moisture for better texture.
  • Brown meatballs well to lock in flavor and prevent them from falling apart.
  • Simmer meatballs slowly in gravy for the juiciest result.
  • Let meatballs rest briefly after cooking to allow juices to redistribute.
