  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Prepare the Ingredients: Slice the bell peppers and onions evenly to ensure they cook uniformly. Mince the garlic finely to release its full aroma. Slice the sausage into bite-sized pieces if desired, or you can cook the sausages whole and slice after cooking.
  2. Cook the Sausage: Heat olive oil in a large skillet over medium heat. Add the sausage pieces and cook until browned on all sides and cooked through, about 7-10 minutes. Remove from the skillet and set aside, leaving the flavorful drippings in the pan.
  3. Sauté Peppers and Onions: In the same skillet, add the sliced onions and bell peppers. Sauté, stirring occasionally, until they start to soften and caramelize, about 8 minutes. Add the minced garlic during the last 1-2 minutes of cooking to avoid burning and to maximize flavor.
  4. Combine and Season: Return the cooked sausage to the skillet along with the sautéed vegetables. Sprinkle with Italian seasoning, salt, pepper, and optional red pepper flakes. Stir to combine and let simmer for 2 minutes to allow the flavors to meld.
