Ingredients

Scale

Main Ingredients

  • 1 lb breakfast sausage (seasoned)
  • 8 large eggs
  • 1 cup milk or cream
  • 2 cups shredded cheddar cheese (or cheese blend)
  • 6 cups bread cubes (preferably stale)
  • 1 medium onion, diced
  • 1 bell pepper, diced (optional)
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon paprika (optional)
  • 1 teaspoon dried thyme or 2 tbsp fresh parsley (optional)

Instructions

  1. Prepare the Sausage: Start by cooking the sausage in a skillet over medium heat until browned and cooked through. Break it up into small pieces to ensure even distribution throughout the casserole.
  2. Sauté Vegetables: In the same skillet, add diced onions and bell peppers (if using) and cook until soft and fragrant to bring out their natural sweetness and add flavor.
  3. Mix the Egg Base: In a large bowl, whisk together eggs, milk or cream, salt, pepper, and any herbs or spices you’re using. This mixture will soak the bread and bind all ingredients beautifully.
  4. Assemble the Casserole: Layer the bread cubes evenly in a greased baking dish. Sprinkle the cooked sausage and veggies over the bread cubes, then evenly distribute the shredded cheese on top. Pour the egg mixture over everything to cover evenly.
  5. Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 35–45 minutes until the top is golden brown and the eggs are fully set. Let the casserole rest for a few minutes before slicing and serving.

Notes

  • Use slightly stale bread for the best custardy texture as it absorbs the egg mixture well.
  • Do not overcrowd the pan when cooking sausage and vegetables to ensure they brown nicely instead of steaming.
  • Let the casserole cool for 10 minutes after baking to firm up and slice cleanly.
  • Mix different cheeses for added complexity and flavor depth.
  • This casserole can be assembled the night before and refrigerated to save time in the morning.
