Ingredients

Scale

Main Ingredients

  • 1 lb peeled, deveined shrimp
  • 8 soft corn or flour tortillas
  • 1 lime, juiced
  • 1/2 cup chopped fresh cilantro
  • 1 avocado or 1/2 cup guacamole

Spices

  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Slaw

  • 2 cups shredded cabbage
  • 1 cup grated carrots
  • 2 tbsp chopped cilantro
  • Juice of 1/2 lime

Oil and Toppings

  • 1 tbsp olive oil (for cooking shrimp)
  • Optional toppings: sliced jalapeños, crumbled queso fresco, shredded cheddar, sliced radishes, diced red onions, chipotle or garlic sauce

Instructions

  1. Prepare the Shrimp: Season the peeled, deveined shrimp with cumin, paprika, chili powder, salt, and pepper. Let them rest for a few minutes to absorb the flavors.
  2. Make the Slaw: In a bowl, combine shredded cabbage, grated carrots, chopped cilantro, and a squeeze of fresh lime juice. Mix well to create a crunchy, tangy slaw.
  3. Cook the Shrimp: Heat olive oil in a skillet over medium-high heat. Sauté the shrimp for 2-3 minutes per side until they turn pink and are cooked through. Avoid overcooking to keep shrimp tender.
  4. Warm the Tortillas: Gently warm tortillas in a dry pan over medium heat or wrap them in foil and heat in the oven until soft and pliable.
  5. Assemble the Tacos: Lay warm tortillas flat, layer with cooked shrimp, a generous portion of slaw, slices of avocado or dollops of guacamole, and finish with a squeeze of fresh lime. Add any extra toppings as desired. Serve immediately.

Notes

  • Do not overcook shrimp; cook just until they turn pink for the best texture.
  • Keep tortillas warm by wrapping them in a clean towel to stay soft and flexible until serving.
  • Finish dishes with fresh lime juice and cilantro to brighten all the flavors.
  • Use a hot pan to sear shrimp quickly, locking in juices and creating a flavorful crust.
  • Prepare the slaw and spice mix ahead of time for faster meal assembly.
