  • 1 cup granulated sugar

  • 3 large eggs, at room temperature
  • 1 teaspoon vanilla extract

Topping

  • 3 tablespoons cinnamon sugar (1 ½ tablespoons granulated sugar + 1 ½ teaspoons ground cinnamon)

Instructions

  1. Prepare the Crust: Combine the graham cracker crumbs, melted unsalted butter, and cinnamon sugar in a bowl. Mix until the crumbs are evenly coated. Press this mixture firmly and evenly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes or until set and golden. Remove from oven and let cool.
  2. Mix the Cream Cheese Filling: In a large bowl, beat softened cream cheese until smooth. Gradually add granulated sugar, ground cinnamon, and vanilla extract while continuing to beat. Blend in sour cream until fully incorporated. Add eggs one at a time, mixing gently after each addition until the mixture is smooth and lump-free.
  3. Bake Until Perfect: Pour the cream cheese filling over the cooled crust in the springform pan. Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is mostly set with a slight jiggle. Avoid overbaking to prevent cracking.
  4. Cool and Add Cinnamon Sugar Topping: Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, sprinkle the cinnamon sugar topping evenly over the surface. Optionally, use a kitchen torch to caramelize the sugar lightly for extra flavor and texture.
  5. Chill Before Serving: Refrigerate the cheesecake for at least 4 hours or overnight to let the flavors meld and the texture set. Serve chilled for best taste and texture.
