Ingredients

Scale

Protein

  • 12 oz smoked kielbasa sausage, sliced into rounds

Vegetables & Produce

  • 1.5 lbs Yukon gold or red potatoes, washed and cubed
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup sauerkraut, drained
  • Fresh parsley (optional), chopped for garnish

Seasonings & Fats

  • 2 tbsp olive oil or butter
  • 1 tsp smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Wash and cube the potatoes into bite-size pieces, slice the kielbasa into rounds, and chop the onion and garlic finely to have everything ready for cooking.
  2. Cook Potatoes Until Tender: Heat olive oil or butter in a large skillet over medium heat, add the potatoes, and cook them slowly for about 15 minutes until golden and tender, stirring occasionally.
  3. Sauté Onion, Garlic, and Kielbasa: Push potatoes to one side of the skillet, add the onion and garlic, sauté until fragrant and translucent, then add the sliced kielbasa and cook until it browns slightly to bring out the smoky flavors.
  4. Add Sauerkraut and Seasonings: Stir in the sauerkraut along with smoked paprika, salt, and black pepper. Toss everything together and let cook for another 5 minutes so the flavors meld and the sauerkraut is warmed through.
  5. Finish and Serve: Remove from heat, sprinkle with fresh parsley if desired, and serve hot directly from the skillet for a rustic and comforting presentation.

Notes

  • Cut potatoes into uniform pieces to ensure even cooking.
  • Do not overcrowd the skillet to allow ingredients to brown properly.
  • Drain excess sauerkraut juice if too wet to prevent soggy potatoes.
  • Use high-quality smoked kielbasa for the best flavor.
  • Taste and adjust seasoning gradually to balance tanginess and saltiness.
