Instructions

  1. Prep the Chicken and Veggies: Rinse and pat dry the chicken breasts or thighs. Chop the onion and mince the garlic to lay the flavor foundation.
  2. Mix the Spices and Combine Ingredients: In a small bowl, blend chili powder, cumin, salt, and pepper. Rub this spice mix evenly over the chicken. Place the seasoned chicken in the slow cooker, then layer with black beans, corn, onion, garlic, and diced tomatoes or salsa.
  3. Cook Low and Slow: Set the slow cooker to low and cook for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and easy to shred.
