Ingredients

Scale

Protein

  • 1.5 pounds chicken breast, cut into bite-sized pieces

Vegetables and Beans

  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (4 oz) can diced green chilies (optional)

Liquids

  • 1 cup chicken broth (gluten-free if needed)
  • 1 tablespoon olive oil (for sautéing)

Spices and Seasonings

  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep Your Ingredients: Dice onions, mince garlic, chop bell peppers, and rinse and drain the black and kidney beans. Cut chicken breast into bite-sized pieces for even cooking.
  2. Sauté Aromatics: Heat olive oil in a pan over medium heat. Sauté the diced onions and minced garlic until fragrant and translucent to enhance their flavor before adding to the slow cooker.
  3. Combine Ingredients in Slow Cooker: In your slow cooker, layer the chicken pieces, sautéed onions and garlic, canned diced tomatoes, black beans, kidney beans, bell peppers, chili powder, cumin, chicken broth, salt, and pepper.
  4. Cook Low and Slow: Set the slow cooker on low and cook for 6 to 8 hours or on high for 3 to 4 hours, allowing the flavors to meld and the chicken to become tender.
  5. Final Taste and Adjustments: Before serving, taste the chili and adjust seasoning as needed. Add extra salt, pepper, or a splash of lime juice to brighten the flavors if desired.

Notes

  • Use fresh chili powder and cumin for better flavor and aroma.
  • Do not overload the slow cooker; leave some space to ensure even cooking.
  • Choose whether to shred or cube the chicken depending on preferred texture.
  • Layer denser ingredients like beans and chicken at the bottom of the cooker.
  • Keep the slow cooker lid closed during cooking to maintain heat and moisture.
