Perfect for chilly evenings or easy meal prep, this soup offers a rich, satisfying flavor with minimal effort, featuring a perfect balance of creaminess, natural sweetness, and subtle herbs.

Ingredients

Scale

Protein

  • 1.5 to 2 pounds chicken breasts or thighs, cut into bite-sized pieces or left whole

Vegetables

  • 2 cups fresh or frozen corn kernels
  • 1 medium onion, finely chopped
  • 2 to 3 cloves garlic, minced

Liquids & Dairy

  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter

Herbs & Spices

  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the Ingredients: Finely chop the onions and mince the garlic. If using fresh corn, shave kernels off the cob. Trim and cut chicken into bite-size pieces or keep whole if you prefer to shred later. Gather all herbs and spices.
  2. Sauté Aromatics: In a skillet, melt the butter over medium heat. Add the chopped onions and garlic and sauté until translucent and fragrant, about 3-5 minutes. This builds a rich flavor base for the soup.
  3. Combine Ingredients in Slow Cooker: Transfer the sautéed onions and garlic to the slow cooker. Add the chicken, corn, chicken broth, thyme, paprika, salt, and pepper. Stir gently to combine all ingredients evenly.
  4. Cook Low and Slow: Cover and cook on low for 6 hours or on high for 3 hours, allowing the chicken to become tender and the flavors to meld together.
  5. Finish With Cream: About 30 minutes before serving, stir in the heavy cream or half-and-half to preserve a silky, creamy texture.
  6. Season and Serve: Taste the soup and adjust seasoning with additional salt, pepper, or herbs as desired. If using whole chicken pieces, shred the meat directly in the slow cooker with two forks. Stir gently and serve warm.

Notes

  • Use bone-in chicken for deeper broth flavor and juicier meat.
  • Do not skip sautéing onions and garlic; it unlocks essential flavor.
  • Add cream at the end to prevent curdling and maintain silkiness.
  • Shred chicken inside the slow cooker for easy mixing and serving.
  • If a thicker consistency is desired, stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last 15 minutes of cooking.
