  • 1 medium eggplant, cut into 1-inch chunks
  • 2 medium zucchinis, cut into 1-inch chunks
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 4 medium tomatoes, chopped
  • 1 large onion, chopped
  • 4 cloves garlic, minced

Herbs & Seasoning

  • 2 tbsp fresh thyme, roughly chopped
  • 2 tbsp fresh basil, roughly chopped
  • 1 tbsp fresh oregano, roughly chopped
  • Salt, to taste
  • Black pepper, to taste

Other

  • 3 tbsp good quality olive oil

Instructions

  1. Prepare your vegetables: Wash and chop all vegetables into evenly sized 1-inch chunks for even cooking. Mince the garlic and roughly chop the fresh herbs to release their oils.
  2. Layer the ingredients: Drizzle olive oil into the slow cooker. Layer onions, garlic, bell peppers, eggplant, zucchini, and tomatoes. Lightly sprinkle salt, pepper, and half of the herbs over each layer to infuse flavor.
  3. Add seasoning and herbs: Drizzle remaining olive oil on top and add the remaining fresh herbs. Do not stir to keep the layers intact for a beautiful presentation.
  4. Slow cook to perfection: Cover and cook on low heat for 6 to 8 hours until vegetables are tender and flavors meld. Avoid opening the lid frequently.
  5. Final touch before serving: About 15 minutes before serving, gently stir to combine all ingredients evenly and adjust salt and pepper to taste.
