Ingredients

Scale

Pie Crust

  • 1 pie crust (homemade or store-bought, enough for a 9-inch pie)

Apple Filling

  • 6 cups mixed apples (such as Granny Smith and Honeycrisp), peeled, cored, and sliced evenly
  • 1 tablespoon lemon juice
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of nutmeg or allspice (optional)
  • 1/2 cup sour cream

Brown Sugar Streusel Topping

  • 1/2 cup cold unsalted butter, diced
  • 3/4 cup brown sugar
  • 3/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Prepare the Pie Crust: Chill your pie crust until firm to make it easier to handle. Roll it out to fit your 9-inch pie dish, pressing gently but firmly into the dish. Trim any excess dough to create a neat edge.
  2. Make the Apple Filling: Peel, core, and slice the apples evenly. In a large bowl, toss the apple slices with lemon juice, brown sugar, cinnamon, a pinch of nutmeg or allspice if desired, and sour cream. Mix until all slices are coated evenly with the creamy, tangy mixture.
  3. Assemble the Pie: Pour the apple mixture into the prepared pie crust, spreading it out evenly to ensure consistent filling in every slice.
  4. Prepare the Brown Sugar Streusel: In a medium bowl, combine cold diced butter, brown sugar, flour, and cinnamon. Use your fingers or a pastry cutter to work the butter into the dry ingredients, forming crumbly streusel topping with small clumps.
  5. Add Streusel and Bake: Sprinkle the streusel topping evenly over the apple filling. Bake the pie in a preheated oven at 375°F (190°C) for 50 to 60 minutes, or until the streusel is golden brown and the filling is bubbling through.
  6. Cool and Serve: Allow the pie to cool completely on a wire rack so the filling sets properly. This ensures clean, well-formed slices ready to enjoy.

Notes

  • Use firm apples that hold their shape when baked to avoid a mushy filling.
  • Chill ingredients like butter and sour cream to maintain a flaky and crisp texture in the crust and streusel.
  • Do not skip the lemon juice as it prevents browning and balances sweetness.
  • Cover pie crust edges with foil halfway through baking if they brown too quickly.
  • Allow the pie to cool fully before slicing for best results.
